Fudge newbie! No thermometer :s

    im no fudge expert but how long have you left it to set? my recipe says 2/3 hrs in fridge, ive also heard you can put it in the freezer, hth:)
    ive made fudge for the 1st time today, ive used the carnation recipe from page one but have put white choc chunks through the middle as in rachel allens recipe, my kids practacally licked saucepan clean lol, looks great ! was a bit worried about making it due to all the stories about not setting, but i followed the instructions and beat the hell out of it, so it when from glossy and runnyish to dull thick and grainy in texture, kills your arms though, its been in fridge for 2hrs and is nearly set but am impatiant so have popped it in the freezer for 1/2 hr cant wait to try it properly. :p if alls well might make some for my pre xmas hampers ive made for family, so far there is , xmas cake covered with marzipan and cadburys choc, snowmen soup, hm candy apple jam (this is gorgious taste just like toffee apples) hm after dinner mints, hm pickled onions, still to make hm mince pies and shortbread bics x

    I just attempted the fudge recipe on the carnation website and I think it's gone well (I have everything crossed!!). Got really stiff in the end and had to push it into the tim with my hands so it's definitely going to set, lol! The bits that set on the spoon were lovely. Can't wait for it to cool down now!! Thanks for all the inspiration!

    Oh :( it's too hard and crumbly. Tastes delicious but I think it's overcooked - any suggestions for the next batch? I brought this one to a rolling boil for 14 minutes. I have no thermometer unfortunately.

    thats the recipe i made. i adapted it to a chocolate fudge and it set quickly, but when i remade it just like it said it took ages to set
  • glad there have been some fudge successes!!! I am going to attempt mine next week but my peppermint creams came out fab and were posted off today- hope my relatives like :)
    Need a new start..wheres good to live in the UK?!
