Fudge newbie! No thermometer :s

Hello,
Tomorrow is the day i begin attempting to make fudge for my relatives for christmas! i have my little tubs ready and designing my labels but most the recipes im finding say using a sugar thermometer...which i dont have!
Also some debate about icing sugar or granulated sugar!!!
I wanted to make a traditional syrup type brown fudge, a white choc and then one with dried fruit...if all goes to plan..
but now im havign a complete breakdown and thinking im in over my head and have left it too late to get pressies (i plan to post the fudge)
HELP!!!!

i made fudge for the first time yesterday. i didnt use a thermoter and the sugar was brown
it turbed out rather well for a first time fudge maker!
i wouldnt fret too much, you can generally test if the fudge is ready to be taken off the heat and beaten is when a ball of fudge is formed when a little of the mix is dropped into a glass of cold water0 -
I made fudge for the first time the other day (using granulated sugar). I do have a sugar thermometer and I was surprised at how long it took to reach temperature. I had it boiling furiously for about 5-10 minutes or so to get it to 116C. However I should have been watching more carefully as I only stirred it occasionally and some of the sugar burnt - this lead to tiny little brown speckles in the fudge which didn't affect the taste but made it look a bit funny!
As a first attempt though I was pretty pleased with it, but it was more like a slightly crunchy tablet rather than squidgy fudge, and you could taste the grains of sugar in it (but I think it tasted good like that, although others might prefer it to be more smooth). I also made the mistake of trying to cut it before it was totally cooled (because the recipe told me to :mad:) and it didn't cut smoothly into squares so I had to trim them again once it had cooled down! hahahaha so im not alone then? lol would it be best do you think to have icing sugar then and not granulated sugar?

That make's fantastic fudge, at least it never lasts long when it's made here
Make's loads too! The butter tablet on the same site is very moorish as well. "Live each day as if it were your last and garden as though you will live forever"

search online for microwave fudge recipes, I've used one before and it turned out great, cant remember where it was from tho0

Well everyone...i have all my ingredients!!! eeeep!!!
Im going to use the rrecipe with the condensed milk and got some mixed dried fruit to try in some as well.
Also as my back up got some ingredients to make peppermint creams. I got some mini cases in 4 colours, some red and green food colouring, silver balls and some dark chocolate. Can you see where its going? Oh and i bought a rolling pin! yippee!!
Bf has gone out for a night shift so its me alone in the kitchen...
I also got fair trade damera (?) sugar and free range eggs for the peppermints.
Really hope it works out, cost me £14..and hoping to give to around 10 relatives.

why did you spend so much on the ingredients?
i only use the value range or whatevers on offer when baking0
