    Spice - cumin, although I'm very partial to smoked paprika as well.

    Herb - oregano - goes with just about anything savoury - I just wish I could get the knack of growing it. :(

  • Spice - Black pepper

    Herb - Basil, I cook mostly Italian. Just too cold up here to grow the flipping stuff!
  • Spice - cumin (roasted)
    Herb - coriander

  • Herb has to be tyme and sage
    spice has to be chilli and smoked paprika

    All these change with the seasons :)

    parslay, mint, thyme, chives, bay leaves, paprika, ginger, cinnamon, chilli powder, basil, nutmeg, coriander

    should get you through most dishes

    Most of these go off very quickly so it is better to have a few and use them than lots of things that just go off.

    The other thing is that whole spices keep much better than ground ones.

    So - mixed herbs but grow parsley, basil, sage, marjoram or oregano and chives in season.

    Spices - a curry powder you like, cumin and coriander seed. Buy fresh ginger (a little nugget costs 10p) and fresh chillies which you can dry if you do not use them in time.

    Edit - agree on bay leaves and you can grow them as well. Buy whole nutmeg and grate to order.

    Keep them in small jars out of the sunlight.

    I'd throw rosemary into the herb mix. Grow one of those - they are very useful in lots of dishes.
