Shwarts cajun spice, we use this on chicken breasts and chips. This spice doesnt have to be cooked to eat either, so can be used on many types of foods.0

Don't forget Star Anise!!!

Spice: Common black pepper. Can never have too much of it it seems, especially on eggs. No wonder they used it as currency in times gone by.
Herb: Coriander (aka cilantro).0 -

Spice: changes with what I'm into cooking, but I love smoked paprika at the moment. It just makes my mouth water when I smell it.
Herb: again it depends, but at the moment probably thyme. Again it's got such a yummy savoury smell.0 -
Cinnamon - but then I've a very sweet tooth, and black pepper would be disgusting in most of the places I use cinnamon.

oh dear - not sure I can single one (or two) out!
Pepper - cant live without it! Black or white!
herb - now that is difficult as you use different herbs for different dishes. I think my favourite is Sage. I love the smell - it reminds me of Christmas and Sunday Roast Chicken!0 -
Those I use most are probably thyme, ginger, garlic (does that count?), paprika and 5 spice but mixed herbs are a great stand by and I wouldn't want to do without all my curry spices or all my spice cupboard really!

Star anise is the one spice I really don't like, took me a while to realise/recognise that was what was in the dishes I wasn't enjoying though! lol
I do wish I knew more about herbs and spices, though I am very slowly using more in my cooking (rather than using ready mixed blends etc).
Are chili's, garlic and ginger actually classified as herbs or spices?
If so I'd have to change my answer to garlic. I get very confused over anything that's not a green herb or dried spice!A waist is a terrible thing to mind.0
