  • I've just got to add this one to the list. The liver might be a bit of an initiative test to find: even our excellent local butcher can't supply a fresh one,

Sorry, but you need a new butcher

Where is he getting his carcasses from ? Be careful as he may just be buying jointed lumps of meat from a wholesaler.

He ought to be able to supply all poultry with their giblets, including the liver.

My butcher offers me all the whole livers from his carcasses as he knows I use them and no-one else wants them!!! Pig, lamb, beef (ox), chicken .. you name it.

Talk to your butcher, if only to understand where he's getting the meat from as something doesn't sound right here - sorry :o

  • I've got half a pack of stuffing mix from a couple of weekends ago.

I was just having a rummage through my cupboards in a store cupboard challengy sort of way and wondered if I could use these to make some sort of veggie burger ... I have onions, a tin of kidney beans, carrots, tinned sweetcorn, frozen peas and some red lentils.

Not made veggie burger before so what would I do

anything else I could put in?

I'd just chuck it all together in whatever combination takes your fancy and glue it together with beaten egg if you eat eggs. Would also freeze any extras.

I make "sausage" type rolls with stuffing mix. Mix it with onions (or whatever is sulking in the fridge) and make as normal sausage rolls (and freeze).

    Hope this helps.

You could make the veggie burger and then dip it in egg and coat it in the stuffing mix to make a crispy coating. yum!

  • I am thinking an egg to bind it all together would be a good idea....also from a few homemade burgers I have made,I found, if I have too many "whole" foods, as in a whole bean as oppossed a squished bean it tends to break up/crumble when you go to turn it over....so perhaps, squish things up a bit before you combine them to make the patties.

    sounds tasty.

    Good Luck

    How about meatballs?

You can mix mince pork/beef/turkey etc with stuffing mix, then add an egg to bind them together, add seasoning and then scoop into balls and bake in the oven.

You are not vegetarian are you?
  • No I'm not vegetarian malamala

Thanks for the tip in squishing the beans first Luca

I'll attempt next week as I have planned my meals til Fri!
