Meal Planning Advice Needed

Ok. Thought I'd better come back with an update!!
I came up with a 5 week meal planner (which has almost been approved!) which I shall rotate. It doesn't include meals that my Mum won't eat and only repeats a couple of times for favourites. When my Mum moves out next year, I'll amend or increase the plan to include all the meals DH and I would eat without Mum.
Here goes:
Week One
Monday: Cauliflower and broccoli cheese, veg and mini roasts
Tuesday: Moroccan Meatballs with pasta
Wednesday: Sausage. chips and beans
Thursday: Salmon, broccoli and veg and cous cous
Friday: Red Lentil Soup with crusty HM bread
Saturday: Pizza
Sunday: Fish pie with veg
Week Two
Monday: Tomato and courguette pasta
Tuesday: Jacket potato with cheese and beans
Wednesday: fish fingers, vegetables and potato croquettes
Thursday: sausages, waffles and beans
Friday: Shepherds Pie and Veg
Saturday: Chinese veg, noodles and rice
Sunday: Meatless roast dinner
Week Three
Monday: Lasagne and vegetables
Tuesday: roast salmon, savoury rice and vegetables
Wednesday: cheese pie with veg
Thursday: Olanda's Soup with crusty HM bread
Friday: chilli non carne with rice
Saturday: fish and chips
Sunday: quorn korma with rice and naan
Week Four
Monday: tuna Pasta bake
Tuesday: toad in the hole with veg and boiled potatoes
Wednesday: jacket potato with cheese and coleslaw
Thursday: spaghetti bolognese
Friday: Vegetable Stew
Saturday: Pizza
Sunday: Honey salmon, mini roasts and vegetables
Week Five
Monday: Red lentil, rosemary and tomato shepherds pie with veg
Tuesday: cauliflower cheese, broccoli and rice
Wednesday: Jacket potato with Peanut and Lentil Layer topping
Thursday: Sausage Mash and peas
Friday: Mixed Bean Bake
Saturday: Egg and Chips
Sunday: meatless roast dinner
Friday's are meals that can either go in the slow cooker or just bung in the oven as I work on Friday's so it's left for DH to cook, so I like to make it easy.
Hopefully this will keep all parties happy! Will let you know how I get on.

Well done CSNM. You've worked hard on that, hope it does the trick. Can I ask why meatless roast dinner as you're obviously not vegetarians?
It was interesting when you mentioned your brother. A month ago, we took my brother and SIL to France for 5 days (a long story as to why) but we've not been away together since we were children. Normally I see my brother 2/3 times a year for a couple of meals mostly in restaurants because we live at opposite ends of the country. I was amazed how much I've changed from the way we used to eat as children while he's stayed much the same! It was so difficult and disappointing choosing restaurants which would serve things he liked and cooked to his liking (i.e.tres, tres bien cuit) that it reminded me of going on holiday with a picky child.
We didn't fall out but we could have done so easily!;)0 -
We are veggie, though we do eat fish. I know that's a picky point with some veggies, but that's what we do in our house. I didn't use to eat fish, but ended up compromising with DH who was a meat eater when we met.
I always use quorn or soya products. I just didn't think to specify when I wrote the plan. So used to it after 20 years!!!
The only thing I'm looking for is lasagne recipe that I don't have to burn to a crisp. Mum doesn't like 'soggy' pasta. so need to find a recipe that's fairly dry when cooked, or else I've got to over cook it!!
