My hubby has just done our onions (well one batch anyway). He soaked them in salt water overnight, rinsed them, boiled the vinegar with a sachet of pickling spice and put the two together. He did the same last year and they were lovely!
Penny, Your spiced honey recipe sounds good - any info ?

I've bought some Sarsons pickling vinegar, some more shallots, some mixed peppercorns and a few chillis. But what's all this about boiling vinegar?
Don't you just peel the onions and put them in the vinegar?If you lend someone a tenner and never see them again, it was probably worth it.0 -
I got some!! Took a ride out to find the local farm shop and there they were..Must admit to coming away with half the shop too :rotfl: Damson jam is on in the breadmaker already and I think I may well be baking allll day tomorrow!
I trim the onions,blanch for a minute in boiling water,peel them then soak them in salt overnight.Rinse them off and pat dry with kitchen roll.
I boil up white wine vinegar(clears the sinuse and strips the walls :rotfl: ) and then add sugar til its disolved,usually a minute or so then put the onions in the jar and cover with the vinegar.Seal and keep for 6 weeks before munching.:D0 -

Is it cheaper to pickle onions/shallots than buying them in the shops. (if you have to buy your own onions?)

Pickled Onions - for Bloke. Here's how:
Make some brine - 2oz salt to 1 pint cold water, make enough to cover your onions. Put your onions, unpeeled, into a bowl and cover with brine. They will float, so you need to put a plate on top of them to hold them under. Soak for 12 hours.
Peel and top/tail your onions.
Soak in more brine for 24 - 36 hours.
Pack into a big jar and fill with spiced*, cold**, vinegar.
Screw down lid and save in a cool dark place for 3 months before sampling.
*Spiced vinegar - crush chillies, peppercorns, cinnamon stick, cloves, mace. Whatever takes your fancy really. Steep in cold vinegar for 1 -2 months.
If you need your spiced vinegar quickly, you need to warm the vinegar in a bowl over a saucepan of boiling water and steep spices in the warm vinegar for 2 hours, then cool thoroughly.
**Vinegar. If you want crispy pickled onions use cold vinegar.
If you want soft pickled onions, see me after class

Thanks Mr bad example - I've got some left over chilis that I've grown!! Also I've always wanted to pickle onions!! (don't know why)

Are you saying that you leave the spices (I have some "whole pickling spice" - lots of different things) in the vinegar for 1-2 months, and then it's ready to use? :eek: I thought you just chucked it all in.
So I need to do the quick method. How about the chillies? I have 4 fresh chillies - should they be put (whole / chopped?) into the hot vinegar with the other spices, or just put in with the onions?
