Well, I've done them now anyway ... and also added 3 dried chillis to each jar, broken in half to release the seeds into the vinegar!!! ... hot, HOT, HOT :eek: :rotfl:
The only onions I've ever seen in white vinegar before are the little silverskin ones, but to be honest I can't see that it should make a difference, at least I hope not!"An Ye Harm None, Do What Ye Will"

I've been pickling onions for the last three years but I can't remember when the best time is.
Is it the end of this month?.. october?
I just wanted to pencil in a weekend so I'm all organised
(already brought the pickling vinegar....its on offer in tesco at the moment if anyones interested)

Do you pickle the pickling onions or shallots? I find the shallots stay crispy for longer.

I'm really lucky on our market we can buy pickling onions by the netted sack.

Hi, I dug my shallots at the beginning of this month - so they're waiting in my shed to be pickled. Will put this on my to-do list for the end of the week.
I use a recipe with spiced honey - yummy! Can't wait for them to be ready.

Yeah...I could do with a hand too.I've got some shallots left over from something or other - might have been the kedgeree. They'll go to waste :eek: unless I do something with them. Any tips for making them a bit scary? :drool:
