I think you need to sit down with your line manager and talk about the problems with your boss. Put it all down on paper/email so you don't miss anything out.
I would stick to the facts and try to leave out the petty sniping stuff to start with - concentrate first on the fact you are being contacted in the evenings and on weekends. What does your contract say? If you are only contracted to work 7.5 hours in the day for example, then your boss is behaving unacceptably by contacting you out of hours demanding urgent attention. Normally if this happens then it's down to exceptional circumstances and you're compensated either by callout pay or TOIL.
Also, this "personality stuff she is into" - is this the company's procedures she is following, i.e. some official company questionnaire? Or just something she has cooked up? Because if this is an official HR process with personal profiling data being recorded, then she is behaving appallingly by disclosing it to other staff without your consent - in the area where I work this would be verging on gross misconduct.
Put down on email what you believe you are expected to do, and then outline where you think this is being taken advantage of. If your line manager is reasonable then they will address this as a matter of urgency.0 -
It sounds like she is feeling her age, going through a old age crisis and taking it out on you because you are young.
Along with boasting about rubbish to make herself feel good.
As for paying her mortgage off, with joint partner no doubt, that will not bring her youth back lol

Make sure that read receipts are off and send them all the following morning.

I do think you should be able to shrug off a lot of what she says/does off to be honest. She sounds thoroughly dislikable but I'd ignore anything not work related. Keep a diary of the work related stuff so you have the basis for a grievance if you think it might be necessary.0

Go to see your doctor. Get signed off for 3 months. Resign. Simple.
You have posted on here a number of times about how bad it is and yet you still work for them. Just quit. It won't get any better unless you stand your ground and stop letting her walk all over you. If you'd quit the first time you posted then you'd be away from her now
A grievance is another possible route but as you have less than 12 months service I wouldn't expect it to turn out well.0 -

Do you actually place any value on her opinion of you? Thought not. So ignore her comments. Yes, no, three bags full that's all you need to deal with her.

If there is a contract (written is easier to prove obviously) then yes she can, if the OP refuses to work the notice she could be taken to court over this.
She cannot give a bad referance, she has to state the dates you work too and from.
The employer could actually just refuse to give a referance at all, so no HAS to about it
