would love to try the pork but I don't know what 'shoulder of pork with skin left on to make crackling' is in German or French - so I need pictures of the raw joint I think!
Not sure where you are, gien but I can help you with the German.
Schweineschulter mit Schwarte (Porkshoulder with skin - schwarte is raw, Kruste is cooked ie crackling)
Schweineschulter mit Schwarte und Knochen (as above but with bone in)
The problem is that the Germans don't seem to like fat on their meat, so it can be difficult to locate a joint with some on, but as I said I'm not sure where you are.
Off the top of my head it's 6 hours ish (depending on weight obviously) for with the bone in and 2 ish without the bone.
The gravy is goooooooooorrrrrrrrgggggeouuuuuuuuuuuuussssss!!!
