Lunch today was a peat-smoked salmon salad - the salmon had been lurking in the freezer since last year when we were in the Hebrides and as we're about to go back for our annual trip this year I felt it was about time it got eaten!Dinner was left over bolognese sauce with couscous. I followed mine up with a bowl of muesli and greek yogurt as I'd run out of inspiration!
We've been having some odd meal combinations in the last few weeks as we've been trying to run down our second freezer before going away. We've managed to get it done, but next weeks meals will be interesting as we still seem to have plenty of food, but relatively little to make meals from! :rotfl:
I'm doing the same EH. I really try hard, each week, to 'shop' from my freezers when I'm planning our meals but they never seem to get any emptier?? Tonight we've had a chicken curry (from freezer) and tomorrow we're having a roast made up of chicken breast and some thighs. The breast is from a 'rubber chicken' from a few weeks ago and I thought if I cooked the thighs from scratch it would give me enough juices to make proper gravy. I'm looking forward to it already;)
Sorry to hear about your predicament jo, definitely something worth saving up for! Hope you've got plenty of days off now school holidays are here, try to have some time to yourself.0 -

Thank god for the Easter Hols, 'home' alone in work, no staff, no kids and 2 weeks worth of filing yuck! But, I can blare music out and turn up in jeans and trainers, oh and post on here :rotfl:
Things at home are becoming increasingly tough. I practically lock myself away in the kitchen 24/7 when I'm at home, I can not sit in the same room as OH anymore. He knows it's over but is still refusing to believe it I think. He says he can't afford to get another place to live cos the rent of private accom is so expensive and will need deposit and a months rent in advance, I do tend to believe he is telling the truth. The loft conversion planning permission has been approved so that will be kicking off soon, probably July time. My plan is now to move out and leave him there with the kids, it was a tough decision but I think it's the only one that is available to me now and he shows no signs of leaving. Through a colleague, there is a possiblity of a 2 bed flat that I could rent at the beginning of May for a sort of manageable rent, although things will be tight. It's just telling OH about it now and saying that I'm going :eek: I hope he doesn't make things difficult for the kids sake.

Nothing exotic here today. We're having a chicken casserole with as many veggies as I can throw into it (onion, leek, mushrooms, carrots, celery, butter beans and cabbage planned so far).0 -
