Sausage cheese toasties tonight. Went to shop to buy milk and pasta and came out with milk - doh!! So don't know what is for tea tomorrow unless I go back to the shop for the pasta. Budgie has a new hobby its making pickled eggs :eek: I know I just can't seem to stop...........................................
Lamb here tonight with veg and some very tasty new potatoes and homemade stuffing..................Really enjoyed it.
The boring salad for lunch and fruit for brekkie.
Still eating healthy and looking after myself, had a facial at the weekend, (friend bought me a voucher) and I have booked in again in 4 weeks.

We had a pork casserole in a sweet and sour type sauce (honey, sherry, soy, wine vinegar) tonight. It was delicious and there's even a little bit left to make me a nice lunch sometime. It's a recipe one of my girls used to make at school years ago but it's ages since I made it, I won't leave it so long next time.0 -

Very easy pork casserole (supposed to serve 4 unless greedy):- marinate diced pork in 1tbsp each of honey, sherry, soy and oil plus 2tbsp vinegar ideally overnight
- fry diced carrot, pepper and onion plus sliced mushrooms for about 5 mins to coat and soften then move to casserole
- brown the pork and move to casserole
- pour marinade, extra tbsp of soy and half pt stock (I used chicken) into casserole and season
- cover and cook for an hour on lowish (170 ish in fan oven) and about 20 mins before the end add in tbsp of cornflour mixed to a paste and can/pk of beansprouts
- serve with rice or whatever you fancy
