and, you might well find that your insurance will be cheaper if you add granddad or parents as additional drivers.
Online quoting systems are your friend here.

Yes. They will ask "will you be the owner and registered keeper"
What I would do. Take out the policy today but don't have it start until the 1st October. The reason being you cannot tax your car without that certificate as it takes about a week for your car to go on the online database.
I'd also buy 6 months tax rather than 12* so that your tax and insurance renewals aren't close to each other, makes things simpler next year.
*Bonus complicated moneysaving option. Buy 12, then on March 31st, cash in your tax disc for a refund and buy a new one on April 1st.0 -

March? this is a newly qualified driver with a new car, chances of them waiting till march are just about zero I'd have thought.0 -

When I agree to get my insurance policy set up, how long will it usually take for the documentation to come through? So that I can then take it to get taxed?0 -
3-5 days typically.0

And the post office now accept printed insurance certificates for tax which should be more or less instant if you use a company that will email/let you download the certificate.
I’m sure others will chime in with which companies let you do that so you can take it into account when you are looking through the comparison sites

I don't think it will affect you, but please remember that a SORN declaration is not transferable.
So if having got a new V5c, you then decide not to tax the vehicle, you will need a new SORN declaration in your name... even if the existing SORN has not run out.0
