Cutting Tray bakes

can anyone give me any tips on how to cut traybakes - eg caramel squares - without the chocolate on top cracking?

    score when still warm and cut through when cooled

    The culinary god that runs the local cafe bar swears by using a warm knife. Just leave it in water for a few mins. The scoring also helps. I know people who put patterns in the still melted chocolate which makes cracking less noticable.
    There are many things in life that will catch your eye, only a few will catch your heart. Pursue those.

    In the same vein, I have terrible trouble getting evenly sized pieces. I've even tried using a ruler without success. Does anyone have a foolproof solution.

    My Mom measured her tin, did the maths, and scored little marks on the edges of the tray. Metal ruler from mark to mark and voila - even pieces. :T

    I do this - works wonders - all my round tins have the diameters scratched on the bottom too :)

    This is what I do too :) And it also works a treat for slicing soft, gooey cheese without making a mess!

    I did see dental floss being used to cut cakes once- thought it a good idea.

    That sounds like a brilliant idea. :T It would probably have to be the unwaxed, unminted one though :D
