My plan for last week wandered a bit off track as I discovered the eggs I needed for the last two nights' meals had gone off. (Sorry, I'm still miffed about that!)
This week I've got:
Friday - squash stuffed with meatball stew with garlic naan bread
Saturday - braised chicken with cider and tarragon (from a recipe card I picked up in Waitrose)
Sunday - chicken and mushroom pie (using LO braised chicken) with broccoli
Monday - prawns in sweet chilli sauce, salt and pepper roast squash, and sticky coconut rice
Tuesday - smoky BBQ pork slices, jacket potato and veg of some sort
Wednesday - out, and not sure what time I'm back: I'll either eat while I'm out or get something out of the freezer when I get home
Thursday - tomato and mozzarella pasta bakeBack after a very long break!0 -

Most recipes always have a few ingredients that I'm missing and I don't want to buy even more food. So I was going to type up some recipes I cook and some ideas for meals. I feel a nice big spread sheet with a page per category could happen
So far I've got sausage casserole, fish pie w/egg in it, mince bulked with quorn & lentils for shepherd's pie/spag bol.
Things I have atm that I need to use: 9 eggs, 300g puff pastry, frozen white fish, loads of frozen burgers!
Always have tonnes of lentils and beans in and bits of root veg, frozen greens.
I only cook for myself and don't have tonnes of freezer space. Would be good if I could make a batch of a base food like mixed beans in sauce or some bulked out mince that I could combine with different spices and staple foods through out the week. Ooooh you've set my brain whirringggg!Living cheap in central London :rotfl:0 -
