    Hi, If you can't be bothered to use them straight away, freeze them. Take them out of their shells and put the nuts in a freezer bag, they keep for up to 2yrs. I have done that before and it works, Also i have bought some mixed nuts for Christmas, popped them in the deep freeze and they were still ok for Christmas the next year. You could make Hazelnut Ice cream if your desperate to use them now. Hope this is of some help. :D

    They sound lovely, but I haven't any wafers or rice paper. I'll keep a note of recipe though, thanks anyway.

    Have you got any silicon baking parchment? Or one of those reusable tray liners? Basically, anything to stop them sticking which doesn't involve grease.
  • Roughly chopped they're great in chocolate brownies. Delia has a recipe. Edit - this is it. It says 4 nut, but I use whatever I have in, so you can use just hazels, if you like.

    iIf you have Nutella you could do Nigella's torta di Granduja.... It's fab! I did it without the nuts on the top though or nutella cake as she less grandly calls it!

  • we have been given bucket loads of hazel nuts in their shells from a relatives nut tree

    whats the best way to use or to store them, as i would love to keep some of them for christmas.

    Here's a whole thread about hazelnuts

    I would say they would store fine in an airtight box.

    They are best eaten fresh so the best place to keep them is in the fridge in a container without a lid, with absorbent paper such as kitchen roll in the bottom to stop moisture forming and prevent them from going mouldy. If you want to keep them for longer (they will last to Christmas) they should be removed from the husk and stored in a ventilated container in a cool dark place.
