Just wondered if anyone knew a nice simple meal that I can make. We always seem to have omelettes which I have loads of eggs.
I also have ham, cheddar cheese which I was going to add to the omelettes.

Delia Smith does lovely Alpine Eggs.
6 eggs
12oz grated cheese of your choice
1oz butter
Salt & pepper
Snipped chives (if you want)
Pre-heat oven to 180 C/ gas mark 4 / 350 F
Generously butter a shallow oven proof dish. Sprinkle on half the cheese. Carefully break the eggs into the cheese and then sprinkle over the other half of the cheese. Season with salt and freshly milled black pepper. Dot the top with a few flecks of butter and cook for 12-15 mins (until the cheese is bubbling and the eggs are set).
We have this with crusty bread and a big green and tomato salad.
Enjoy!
PS Delia says this serves 3, be we (having healthy appetites ) share it between 2.

This is a gorgeous (and filling) pie! You can use bought pastry if you don't want to make it yourself.
Cheese Pie
Pastry made with 8 oz flour, 1 tsp salt, 2oz butter, 2oz veg fat, 2 tbsp iced water.
1 Onion, finely chopped
1 clove garlic (optional)
8oz cheddar cheese
1 egg, lightly beaten
½ tsp white pepper
Line a flan tin/dish with two thirds of the pastry. Preheat oven to Gas 6, 200ºC . Melt the butter in a frying pan and cook onions and garlic until translucent and soft. In a bowl mix the onions with the cheese and then add most of the beaten egg (leave a tiny amount for glazing the top of the pie). Then add the salt and pepper and mix well with a fork. Spoon this mixture into the lined flan tin and then top with the remaining pastry and glaze with the egg. Cook for about 35 minutes or until the pastry is a lovely golden colour.
This can be served hot or cold. I usually eat it with oven chips and salad!0 -
I like the sound of them. Think I will make the first one as I have all the ingredients. BF doesn't like fried eggs, so will he like the idea of the eggs not being all smooshed up.

I love a tortilla type omelette, baked in the oven. I roast small pieces of potato and some whole garlic cloves (until they go sweet) in a roasting tin. I then pour over the omelette mix, perhaps with some fresh spinach and put it back in the oven until it's ready. You can chop up the garlic or perhaps leave in the whole cloves - they are a lovely 'surprise' if you get one in your piece of omelette as they are so sweet - but you will smell after :rotfl:0

It's annoying that I only have one frying pan, so we have to eat at separate times. We both have a 3egg omelette. Can I bung all 6 eggs into the frying pan, make one huge one and just cut in half? Then we can eat at the same time.Pink Sproglettes born 2008 and 2010

tear up 4 flour tortillas into small pieces and put them in an ovenproof dish, add some paprika and a chopped chilli if you fancy. Beat two eggs with some milk and pour over the tortillas. Leave for 5 minutes, stir, then sprinkle over some cheese. Bake in the oven for around 20 mins. - End result is a lovely, toad-in-the-hole type thing.
Recipe should serve two. Hope that helps!0 -

Should be fine for 2 as a main dish (depending on your appetite) but it's a bit heavy by itself. You'd probably need a side dish with it - I find salady stuff best, but OH would have it with chips if I let him

River Cottage Family Cookbook - Spagetti Carbonara.
Cook pasta.
Fry bacon.
Mix 2 - 3 eggs, 50g cheese (cheddar / parmesan), 2 tbsp cream (I used yogurt)
Drain cooked pasta, return to pan. Add bacon and egg mixture. Return to low heat and toss until cooked (won't take long).
Not at all like what I think of as "carbonara" but GORGEOUS!0
