I also have ham, cheddar cheese which I was going to add to the omelettes.
Don't forget you can use those eggs as a pudding. Haven't had these for years but I do remember they were delish!
To serve 2 people: 2 slices of bread, 1 spread liberally with your favourite jam, place the other slice on top and cut into four (technically, this is known as a jam sandwich:D ). In a bowl beat together 2 eggs and a little milk. Dip each sandwich into the egg mix and then deep fry in hot oil until crispy. Remove from oil and toss in caster sugar. Enjoy. They taste a bit like hot doughnuts. :wave:It's nice to be important, but it's more important to be nice.:kisses3:0 -
DD2 has something similar for breakfast if she's STARVIN' HUNGERY.
1 egg
couple of tablespoonsful of milk
2 slices of bread
Mix egg and milk with a fork and put into a shallow bowl a bit larger than the bread.
Lay the bread slices in the milk/egg, turn over so that both sides are soaked then shallow fry until golden brown. The kids call it Eggy Bread but OH has always called it Gypsy Bread.
DD2 likes to have it with honey (memories of Micky Waffles and Maple Syrup from the holidays _pale_)

Ah, think it is the fact that you have your own hens. You can appreciate a lovely egg, and use it. The taste is soooooo good, just plain boiled or fried eggs are a treat with some freshly made home made bread - to die for. Nothing like any egg bought in a shop, even free range.
Only suggestion is to get more chickens to get a glut........all depends on space that you have.........and do you really want more than you can use?
For Pollyanna24
A really simple recipe using eggs is a sort of savoury pudding.
For a generous one for two.
Make up 2 sandwiches with filling - could be cheese & onion, ham & cheese, you can add tomato in the filling, actually anything really other than egg. Cut into quarters and place in ovenproof dish.
Whisk up 2 eggs - and make up to about 1/2 pint with milk. At this point you can add other seasonings, herbs or spices - touch of cayenne pepper, or a bit of chilli, possibly some oregano or basil, just whatever you like.
Pour egg mix over sandwiches. You can grate some cheese over at this point if you like.
Bung in oven, I put in gas mark 6 for about 20 - 30 mins until light brown & crispy. Serve with green salad.0 -
I like saute leeks, slice of ham, crack in an egg, then a bechamel sauce over the top then grated cheese, cook in oven and serve with a salad and crusty bread, ummmmmmmmmmmxxxxxxxxxxxxxPawpurrs x0

Ahh, now, you see I thought French toast was that prepacked toasted bread that you find in French supermarkets. Tastes more like cardboard than toast.
