Have an allotment (v money saving and good fun too!) and am currently experiencing a massive glut of sweetcorn. As we have already had courgette and carrot gluts so far this season I am running out of space in the freezer and inspiration for what to do with things!
Any suggestions/recipes very gratefully received!

well must be fiddly but of course you can freeze the kernels... .but if you are stuggling for space....
Sweetcorn soup, chinese style?
My personal favourite.... sweetcorn fritters, which is done in batter made with SR flour and fried. I have them with roast dinner but Ive seen them on resturaunt menus for dipping/ snacking with sweet chilli dipping sauce, so Ive done that as well.:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

I've made this with frozen sweetcorn and it was good so I'm sure it'll be even better with fresh
Makes 3 medium sized jars
4 large cobs of corn
2 large tomatoes
1 red pepper
1 medium onion
2 oz sugar
2 tsp salt
2 tsp mustard powder
1/4 pint vinegar
1/4 pint water
Cut kernals off corn, chop tomato and pepper. Slice onion thinly.
Cook all the veg over a low heat for about 15 mins or until soft.
stir occasionally to stop it sticking.
Add all the other ingredients and cook for another 15 mins. The mixture will thicken a bit.
Pot in sterilised jars.
Very good with sausages and BBQ ribs or drumsticks.

Ooh lucky you! My attempts at sweetcorn were dire. Better luck next year I hope.

I blanched mine in their skins in the microwave, cut in half and froze.
In the States we had corn pancakes - dropscones with sweetcorn kernels in. They were served with bacon and maple syrup. Bit sweet for me - I'd leave out the strup and have scrambled egg.

We were given some stuff called 'spoonbread' for breakfast that tasted of sweetcorn. Will google for a recipe...........

I've seen a sweetcorn icecream recipe somewhere, it looked really odd, but interesting enough to try,I've never got round to it myself but would be keen to try it. google it and see!0

Please can I have the recipe for the sweetcorn fritters... they sound lovely :O)Ladymac0 -
This is from the Hillbilly Housewife website.
The recipe calls for tinned sweetcorn, but I think if you blanche the fresh sweetcorn kernals it will do just as well. And 1 cup = 250ml volume
