Diced pork, and peppers - what to do with it ..?

I've got some diced pork out of the freezer. I've got some peppers that want using up in the fridge.. I've got the usual store cupboard stuff.

I'm off to a meeting at 12, will be back about 4:30 (by which time pork will have defrosted), and need to eat by 7 o'clock.

Any ideas please ?
I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say. :)

  • My sister was dating a sicilian and he used to make a dish, pork, peppers, onions, garlic with fresh tomatoes all cooked in the same pan, put in the fridge to cool and ate it later, cold, with crusty bread, it was absolutely gorgeous....something you wouldn't think of making as a meal on its own.

    Stir fry? I find the sauces go just as well with pork as they would with chicken.

    Yum Chriszzz! Or you could do a Spanish version coating the pork in paprika and then saute it with all those other ingredients. Splash of white wine of sherry if you have it...

    He used to also make a dish where he would cook mince, onion and garlic in a pan, cook the long pasta, then drain it, put a little oil in frying pan, add the pasta, mince, onion garlic, salt and crack two eggs and fry on a high heat, that also was delish. Got me all hungry now.:drool:,
  • Kebabs! - put a bit of spice and oil on the meat and thread them on to skewers.
    Just need grilling then :)
