I was going to suggest Costa Rica, for the beach holiday/rainforests, but with you already been to nearby countries such as Belize and Guatemala it might not be a good option if your looking forward to something different

Sri Lanka does have some heavy rainfall. - but it's a beautiful country with lots to see away from the beach resorts.
I'd look into doing at least a 4 day tour (maybe up to 7 day).

HI if you are looking for pre April or post October then Goa would be fantastic, other times you will be in the monsoon season so it really is a key issue when yo are intending to travel. The Caribbean is lovely but Sept/ Oct is hurricane season.

We flew to Mumbai and then took internal flights to Delhi to visit the Taj Mahal and then flew to Goa for stunning beaches food sun sand etd
