  • I've been trying to get better at bringing lunches in, and making lunches for DH (who has energy problems, and so needs lots of energy boosting snacks throughout the day), and I'm getting better. I'm lucky at my work as I have a microwave, so lunch today and tomorrow is last night's macaroni cheese reheated!

    I have a question - I would like to make rice salads as a nice change, but have failed so many times at getting rice cooked nicely, and so that it is still nice the following day.

    I was wondering if those packaged microwave rices (think the Uncle Ben ones, or similar supermarket own brands) are suitable for eating cold as they are out of the packet? I know they are already steam cooked... Does anyone know?:huh:
    In a better financial position than ever before (thank you MSE!). Moved back to Scotland and now trying to keep debt-free!
  • Quite good at taking packed lunches, but get very bored with the usual stuff. DH is off work this week, so not making him lunch!! And although I usually have one bought lunch per week, this week I am trying to abstain as its a five week month. We are lucky to have a microwave at work.

    Today's lunch is HM Greek Salad and pitta bread.
    Tomorrow (which is normally subway sub of the day or bought jacket spud day) will be brought in jacket potato, cheese and garlic sausage and some salad.
    Thursday will be a sandwich.
    Friday will be noodles.

    Job done - back to my one treat a week next week.

    Day two and success I haven't spent a thing and I enjoyed my lunchbox.

    I'm liking being so organized, makes me feel more in control

  • Day 2 of non-boring lunch mission!

    Leftover broccoli and rice casserole with soy and seame carrots (undercooked these a bit so they were quite crunchy :D Nice though!), banana and custard donut (whoopsied for 7p)

    Still a wee bit boring, but I have plans for this to change when bento arrives :T

    I don't know if this is of any help,but,for great tasting rice,if you add a third of a tablespoon of vinegar to the water when you boil the rice,it'll be fluffier,less sticky and easier to spoon.;)


    To be honest,I'm impressed at the number of people who take in a different packed lunch every day.There's no way I would do that.On my days off,I prepare a dish that I'll eat every day at work for the next week.This last while it's been rice with a lentil dhal and yoghurt or fruit or dried fruit.Just as well that I don't mind eating the same thing every day,and fortuanately maybe,I don't have to prepare a packed lunch for anyone else.

    Day 2: another good lunch but what I found was that I don't need so much food. I took in the frittata, a bit of sliced ham, tabbouleh, another salad and fruit, but the second salad wasn't touched. I think that that box in my set should be used for a snack like dried fruit & nuts or carrots & dip next time.

    I'll be working at home tomorrow. I'm planning to have the rice from the freezer, the miso chicken from the freezer, and freshly cooked chinese greens in soy and sesame. I'll use the lunch box anyway so as to keep portions under control. I've never managed five days in a row of not buying lunches, so it's a good start.

    Trying to muster up some energy to make cheese, mushroom omlettes for tomorrow's lunch. Have kneaded dough in bread maker for cibatta rolls, just need to go and put dough in oven....

    my HM Italian herbs and sundried tomatoes rolls were yummy! Had 4 for breakfast :)

    I've been making bento type lunches for the last few months, and it's really made me think more about a healthy balanced lunch. This week I've been having a middle eastern themed bento, with felafel (made from a mix), tubs of hummus and hm baba ghanoush, and a lentil, tomato and cucumber salad. OH's lunch tomorrow is going to be rice, a (frozen) portion of beef stew, edamame and a few frozen dimsum dumplings. I have a microwave at work so can take things to heat up, which makes life a lot easier.

    I've also been building up a freezer storecupboard so I can put a bento together quickly. Things I've found work well so far are:

    Sorry I haven't updated my post since day two but I'm pleased to report that I managed to take a packed lunch every day this week!

    I did take cream cheese and crackers for three days as it's so quick, I just need to do more prep work over the weekend.

    Will def be doing it again next week as it's not only good for my purse it's also great for my waistline
