Personally, I wouldn't eat liver that was past its 'use by' date. Give it a good smell before you decide

I have never cooked liver, but i remember liking it as a child. What is the difference between calfs liver and (i think i saw) lambs liver? I have no idea what Nan used to give me, and shes not here to ask anymore. (

bleugh bleugh bleugh! I hate liver! hate it with passion! my mum used to give it me lots when I was little, cos it was relatively cheap and supposed to be really good for you. I haven't eaten it once since I left home...the memory of finding some wiggly-tubey bits in it put me off it for life!

But, I'm sure its yummy if theres no tubey bits in it :)

My mum just fried it with onions and made some gravy stuff (as richyg suggests)

There's nothing worse than tough liver with tubey bits in it. But it can be really nice depending how you cook it. I half freeze it (or half thaw it if I'm getting it out of the freezer) which makes it a lot nicer to handle and much easier to slice into really thin strips. (Hands get a bit cold though!) Then once it's fully thawed again I stir-fry it quickly with onions, garlic & peppers, then add stock & cornflour mixture to the pan to make a nice gravy. Really tasty! We have it with roast potatoes. I'm glad this post came up - I haven't thought about cooking liver for ages but now I will!

I used to eat liver a lot, but now I only do so when I find the organic variety. I just fry it in extra virgin olive oil, with garlic and rosemary.

    :)

soak liver in milk for 1-2 hrs before frying, makes liver very tender and much less chewy.
Can also fry lightly, transfer to casserole dish with fried sausages or bacon and veg of your choice and cook slowly in oven. Serve with mashed potato.
Plase do not add Garlic unless you want to mask the flavour of what you are eating.
In the good ol day's we used to cook very tasty and wholesome meals without the need to add Garlic to everything, I like garlic but it is not necessary to use it or other herbs etc to mask the flavour of food which seems to be the norm with all cooks/chefs these day's. Try it without and reclaim your tastebuds. :-)

why not cook it in a casserole today and have it tomorrow, heated up? That is what I would do. Heaven! Getting in from work and not having to cook!
