Maybe a little hint for challengers: I think Saint Delia strongly advises cooking pastry in a metal dish to it doesnt go soggy
. Maybe a proper old styler can confirm or deny?

Apparently this is made with crusty pastry so should add to the confusion you both already are suffering from, :eek: plus neither of you seem to have a dish that fits the shape but hey ho it had welsh in the title, and all good welsh people know its where leeks were born

I've cooked pastry in glass, metal and china dishes and it's turned out OK in all 3 so I wouldn't worry too much0 -

On the pastry question what about making shortcrust for the bottom crust and topping it with ready-made puff pastry ? Puff pastry is a bit wasted when its covered in wet filing but it is delicious on the top a pie0
