That's the way I did it the other week, we must have the same recipe (Good Food Magazine?). It was lovely cold as well. I usually pressure cook mine a few at a time for about 20 mins depending on size.Boil for 30 mins whole, then peal, then roast for 25 mins with olive oil, balsamic, salt, pepper and oregano. v yummy.
Beetroot curry (i use the Rick stein recipe) is pretty good to!0 -
My recipe came from Rick Steins faer Easter Odessey book, but its prob the same recipe!
I agree with wearing marigolds for pealing, and then wash the board asap! An apron is essential when I deal with beets. I need to get a plastic wipe down one like we used at school!0 -
Bit confused about the leaving skins on whilst cooking suggestions - I find even if well scrubbed they come out tasting too earthy if cooked whole??0

Oh yes, but if you think that not peeling them gives them an earthy flavour, then try peeling them first, I suspect they'll soon go back to the other method.Yikes:eek::eek::eek:

Just to make you smile, my father was cooking some beetroot in the pressure cooker, he somehow knocked the weight thing of the top, the result was the kitchen splatted with beetroot, walls, ceiling floor everywhere. He had to redecorate the whole room.0

I top and tail mine in the washing up bowl in the sink and then put them into the the slowcooker.
The skin just slips off when cooked and its easy to drain the pot down the sink and then the peel can be thrown out.
All the mess is contained in one place and its easy to clean up without getting it everywhere.
