Welsh cakes recipie wanted!

My Nan used to make welsh cakes.Kind of tasted like a sweeter spicier flat scone.Was moist needed nothing extra on.She used to cook them on a griddle type hot plate.She would make about a hundred but they never lasted week with me,my grandad and guests.
Does anyone have a simple recipie?
I know she used sultanas and like a mixed spice.
I miss the taste they remind me of her so would love to be able to make some.

  • WELSH CAKES.

    8 oz flour
    4 oz butter
    3 oz castpr sugar
    2 oz currants
    1 teaspn baking powder
    2 tablespns milk
    1 egg
    pinch of salt


    Sift the flour, baking powder and salt together. Rub in the butter until the mixture looks like breadcrumbs. Add the sugar and fruit. Beat the egg and add the milk to make a firm paste. Roll out on a floured boarad to a thickness of 1/4 inch and cut into 2 inch rounds. Grease a griddle or electric hot plate or thich frying pan. Cook the cakes on the griddle over a gentle heat for three minutes on each side or until golden brown. Cool and sprinke with castor sugar. Serve alone or with BUTTER!!

    8 ozs plain flour

    2 or 3 ozs currants
    3 ozs caster sugar
    1 egg
    1 tbs milk

    rub butter into flour
    add all dry ingredients and mix
    add egg and milk

    make into flat cakes and cook on griddle

    my Nain used to use half butter/half lard but depends on taste :)

    What are they called in Wales? Is it bakestones?

    I'm looking forward to making these.I remember the smell as a child.Still annoyed with my uncle at disposing of my Nans possesions way he did.She had some wonderful pans that you just dont see or can buy anymore.I would of loved them.
  • Yep, Bakestone is the name. Ours was made in the port talbot steel works.

    I prefer putting either just cinnamon or nutmeg instead of all-spice. I did once have some made with lemon essence which were really nice too.

    If you don't have a bakestone, a heavy based fryingpan will do.

    In welsh, llechwen (thanks Kaz :D ) That's what I'm having for my birthday!

    I don''t like currants so I put coconut in instead and they taste lovely.
  • I love welsh cakes my Great Aunty Claro was a world class welsh caker:) I found that you can leave out the egg with no ill effect. They are lovely with butter.
