Generally speaking, the older, the more it has a taste. Enhance any taste by spreading a tiny bit of English Mustard (be very cafeful with kids!!). Mature will have more taste then normal Chedder. Mild has very little taste. Not being a cheese expert myself (not eaten it in YEARS!) its often the more expensive cheeses have the stronger taste.
Parmasan has quite a strong taste and you can get away with not using too much of it but it has quite a definate taste so not everyone likes it.
The burger cheeses are the ones that most taste like plastic and I think (my opinion) its because there is only a tiny amound of cheese in the stuff and alot of filler. Its also not at all aged so wont have even had a chance to build up a taste (even if there was enough dairy in it to do so!). You could always try a really mature chedder, cut into slices and bump up with a cheaper cheese for some texture? see if it works?0 -

I buy Sainsbury's Basics Italian Hard Cheese (made with cow's and buffalo milk, £2 for 200g) to add to cooked cheese dishes. It's a bit milder than parmesan or Pecorina Romano but really livens up a mundane cheese!
Sainsbury's basic Full Flavoured Cheddar is good, too. £5.98 per kg"Cheap", "Fast", "Right" -- pick two.0 -
OH was eating far too much cheese on a weekly basis. To satisfy his need for cheese taste, I stock up on Philadelphia Light when it's on offer (£1 for large pack) in Asda. Thinned down and mixed with bacon, garlic and mushrooms it makes a tasty pasta sauce too.0

Oh I love Cathedral Mature on toast with a little English mustard, or Marmite. I bought loads and froze it when it was bogof at Tesco recently. When that's not available I love Waitrose Davidstow Mature, a bit crumblier, but lovely tangy taste with pickled onion and crusty baguette.0

I tend to get whatever is on offer from Morrisons as they do have very good deals on decent cheeses. I buy a few at a time because the dates are usually good.3 kids(DS1 6 Nov, DS2 8 Feb, DS3 24 Dec) a hubby and two cats - I love to save every penny I can!

Tesco's Extra Mature has a pretty good taste, I make cheese and pickle sandwiches every day for my OH and have done for over thirty years. He's a bit of a cheese buff and likes cheese with attitude, none of your mild stuff for him. It's 2 x 500gr for £5 until 24/8/10.:whistle: Be the kind of woman that when your feet hit the ground each morning the devil says, "OH CARP, SHE'S UP"! :whistle:0

I love CC cheese. have to disagree on the lakeland and Wykes farm tho - to me those just taste 'mouldy' (and no they are well in date
).
If you have a NEtto they do 'red label' or another that i cannot remember the name of almost constantly on BOGOF and that is really nice cheese at £2.99 a block.
Have found that Tesco, Asda and Morrisons own brand mature is lovely (but not the value ones).
Like you we go through loads of cheese as DH seems to use half a block for 2 cheese toasties....... which he has at least twice a week!!loves how my "I've been censored" signature has been censored. LOL. Happy Christmas. :xmastree:0 -

Tesco's have Pilgrim's choice BOGOF at the moment, and if you get the Extra Mature it is 400g per pack (the other one is 370g), normally £3.99 per pack (does anyone actually PAY that???)What is this life if, full of care, we have no time to stand and stare0
