Do providers know where you've switched?

If I were to completely switch from say sky to virgin / BT etc would sky know where ive moved to? And if so how would they know?

If you're referring to a broadband switch, then yes, because presumably when they receive your MAC from the new ISP then they know the source it has come from.
But why would it matter if they did?
If you are talking about TV, then no, because you can't 'switch' from Sky to VM. You just order one and terminate the other, they're completely different delivery systems.No free lunch, and no free laptop
