Thanks for all the replies!
Well..... welcome the birth of the eccles mince tart!........
The pastry was quite crumbly so it didn't want to be stretched too much. So this seemed to be the solution.
Now of course I have left over eccles cake filling mix. Will this never end????????????? .... I sense a porridge topping coming on..
The main project was a walnut tart - just had a piece and it's like a pecan pie. Still warm with ice-cream......danger, danger!
It had scary amounts of sugar, honey AND syrup......0 -

Unfortunately, technical abilities only apply to the kitchen and don't extend to getting pics but here is the recipe (just add government health warning):
Pastry: 275g plain flour, zest of orange, pinch salt, 175g butter - rub in to breadcrumb consistency and bind with juice from zested orange.
use it line 30cm loose bottom flan tin - blind bake for 10 mins at 200/gas 6
meanwhile mix together:
8 beaten eggs
350g caster sugar
275g runny honey
275g maple syrup
tsp vanilla extract
pinch salt
put 450g walnuts on the flan base, pour over the mixture. Cook for 20 mins at 200/gas 6. Then reduce to 180/gas 4 for 30 more mins until it's set. Cover with foil if it's browning too much.
Sooooo....
I made exactly half the amounts above and it's turned out a normal size in a normal ceramic flan dish. And it didn't seem to need cooking so long (maybe 5 or 10 mins less)
No maple syrup so I substituted golden syrup, and I didn't have any vanilla essence.
Gawd knows how big it would be if you made the stated amounts.....0 -
my gran would have made a 'foote' (apparently the E is importantant) this would have been a mishapen overworked bit of pastry folded and sealed containing jam or mincemeat (sweet) this would make an unexpected pudding for her and grandad - add custard and it would make pud for 3!!Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"0

Oooh, you could try Maids of Honour..... Jam Tarts with a spoonful of victoria sponge mix on top. Then, if you have any of that mix left over, cook a few fairy cakes or a sponge cake.0

I'll add this to the exisitng thread to give you more ideas.
