Depending on how much there is of course but I always make my OH a fruit or jam turnover with leftover pastry.. just roll out into a circle add some jam or sliced apple wet the edges with water and seal together use a little milk to wash over the pastry and I sprinkle a little brown sugar over and bake only takes about 15mins serve with cream or custard or wrap in greaseproof for a tasty lunchtime snack...
We used to call these Jam Bombs when we were kids - mum used to make them from left over pastry with either jam or dried fruit in them. Tasted lovely.

If there's a decent amount left, freeze it for another time when you need it.

I was going to suggest freezing it too. That's what I'll be doing with my leftover pastry today.
One idea is to keep a spare flan tin in the freezer and press odd bits of leftover pastry into it until it is covered.0 -
I am off to my friends for tea this evening, and have promised to bring dessert. I have defrosted some shortcrust pastry for the children to make jam tarts, but I know there is going to be loads of pasty left over as I only have a tray to make 12 tarts.
Can anyone give me some ideas about a dessert I can make with pastry? Preferbly something quick and easy 'cos I am rushed for time today. I have tinned peach and apricots in the store cupboard. Syrup, sugar, some apples, Xmas mincemeat (but don't fancy making mince pies), honey (though I'm not keen on that), jam, lemon curd, flour etc.
Would like some suggestions please - will pop back in half hour after lunch for a read through.

Hi how about Apple Pie. I know its not really original but hey its still a lovely dessert and you can use up the rest of the short crust pastry. Sorry i can't think of anything else at the moment.20p savers club

Basically jam tarts with sponge mix on the top. Maybe make some with the apricot jam for a different taste.

Thanks demented - don't fancy peeling and chopping apples so will plump for Rikkis suggestion. Does anyone else find apples coring/slicing tedious? Or is it my inherently lazy nature?0

if you made jam/apple turnovers or the like, and cooked them till the pastry is cooked but not brown, you could cool them and refreeze - reheat - instant puddings! Or my family love a pastry base, then jam/fruit, then a fairly stiff victoria sponge type mixture on top - good with ground almonds in the sponge, or with the jam, and almond essence in the sponge. good as a hot pudding or as a cold/warm cake. I put cold/warm, because my family don't understand cold cake - one has never lasted long enough to get cold - they are cake fiends!0
