Boiled vegetables are utterly boring, especially with no or reduced salt (for health reasons) Try this:
Any selection of the following: carrots, swede, turnip, sweet potato, red/orange peppers, broccoli, celery, leek. Cut/peel/slice into fairly equal pieces, quite thin slices, pieces up to 3/4 inch. Rinse and drain, but leave a little water in. Use a microwave container with a lid that you don't treasure (it will get very stained) and dump the vegetables in it. Liberally sprinkle ground ginger, ground coriander and turmeric (be very careful with the turmeric, it stains everything in sight!) over the vegetables with sea salt and black pepper. Give it all a good shake around to distribute the spices a bit, put the lid on and microwave for about 10 minutes on full (you'll need to experiment with the timing and the amount of water). They should finish al dente.
Dump the lot into a deep frying pan or wok, juices as well, splash liberally with olive oil and stir fry. Needs to be watched. You want the signs of browning and possibly let it catch a bit, to give a nice bit of crunch here and there. But be careful, it's been a fair bit of work to ruin it.
It goes with pretty much everything. And if you really like it, you can have more of that and less of the main part of the meal - which is a bit of an economy, though vegetables are not really cheap. Necessary for your health though, so money well spent.0 -

what's the alternative without a microwave (OH won't let us have one, Chef's!!!!!!)
