turkey escalopes...any meal ideas..?

    There is also a more elegant one:

    1) slice the turkey into thin strips and quickly brown them in a roomy frying pan (I use a wok). Season them with salt & pepper while you cook them. Take them out and keep warm.
    2) in the remaining butter, fry a chopped onion until soft.
    3) Add a good slosh of white wine (about 200 ml) and boil until reduced by half.
    4) Add same quantity of cream (heat it a little first before you add it), and simmer while stirring from time to time. Keep simmering until the sauce has thickened.
    5) Add the turkey strips to the sauce, correct seasoning and heat through.
    6) Sprinkle with parsley or chives and serve

  • I do a similar recipe to champys, except that I add sliced mushrooms and a diced red pepper, and use half fat creme fraiche (only add after you've turned off the heat otherwise it will separate) instead of cream. Serve with rice, yummy. One of our favourites.

    They are quite nice if you cut them into strips and stir fry with veg. Add soy sauce just before the end of cooking. Serve with noodles for a cheap Chinese!

    Anyone got a recipe I can do in the slow cooker with some turkey steaks. Got a packet of them in the fridge that go out of date tomorrow :confused:

    philadelphia cheese (or similar) with chives and chopped mushrooms which have been cooked togther (until mushrooms are properly cooked) makes a good topping for turkey steaks

    I agree with the others and don't think that turkey steaks are particularly good for slow cooking. This earlier thread may help:

    I use them as chicken breasts as they are cheaper. Taste lovely in a korma sauce. I actually prefer it to chicken.
