i have just taken some turkey escalopes out of the freezer.. to make something for tea..
but normally i either do a curry.....or a spag bol type thing with tinned toms..etc.. but instead of mince i cut up the turkey... and it works quite well...
but we are getting board with that now.... so
has anyone got any suggestions......
i have basic ingredients.... garlic.... mushrooms...onions....
i need to get out the food rut that i'm in......as i am allways cooking the same things....

They are nice dipped in egg and breadcrumbs and then fried in a little olive oil until brown. Keep warm out of the pan and the make a sauce in thge pan with sliced mushrooms fried gently, a splosh of wine or cider, some creme fraiche or yoghurt and a little mustard - wholegrain or dijon works best.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

What about Turkey escalopes in a cheese and mushroom sauce ?
Cook the escalopes in a frying pan in butter or olive oil, or a mixture. Remove to a serving dish and keep warm while you make the sauce.
Cook sliced mushrooms in the pan until starting to soften - add garlic at this point if you like.
Add more butter to the pan if necessary and stir in a tbsp of flour to make a roux. cook for a minute or two and then gradually stir in some liquid - milk/ chicken stock/ white wine,or a combination of these. Stir all the while and add enough to make a fairly thick sauce (depending how you like it).
Add grated cheese and stir into sauce until melted.Pour over turkey and serve.
Some cream in the sauce is nice too;)0 -

I used to like to coat in flour and paprika, then fry in butter for a few minutes on each side. Then remove from pan and keep warm, and add some sliced mushrooms, some frozen peas if you have them, and some cream. Heat until the cream thickens slightly and serve with pasta. I used to cook this a lot for romantic dinners when DH and I were students, but haven't had it for years now.
Feeling a bit nostalgic now...

I bake turkey escalopes whole in an oven dish with a tin of mushroom soup on top. I throw in a few normal mushrooms too for extra depth and add a clove of crushed garlic.
I also pop a couple baked potatos in the oven at the same time and cook for 40 mins.
Finally I slice up some onion, courgette and peppers, throw on a little cooking oil and pepper and roast those in a baking tin for the last 20 minutes.
Very quick, easy, tasty meal!
Whole meal takes about an hour and is simple and cheap.0 -
If these are what I think they are (pieces of turkey breast?) I put them in a greased ovenproof dish, then cover them with made up parsley and thyme stuffing and bake. A mid-week roast dinner with roast potatoes and vegetables.0

Hi Everyone,
ive got turkey steaks that I need to cook, and I would love any ideas as to how to cook them with a bit of oomph. Normally I would just grill or bake them, but, DH doesnt like them this way (Im afraid ive got no imagination).
Can anyone give me any ideas?

How about some kind of marinade; spicy, or otherwise, depending on your/OH's own preferences. They could then be panfried with some onions and maybe tomatoes.0

try this: season the turkey steaks with salt, pepper and a little paprika. brown on both sides for a few minutes. then wrap them in a thin slice of ham (cured ham is delicious but not cheap), and place in a shallow oven dish. pour over some double cream and sprinkle with grate cheese. cover in foil and bake in a not-too-hot oven until done (about 25 minutes)."Remember that many of the things you have now you could once only dream of" - Epicurus0
