    first effort to be tried and tested

    pasta, hot dogs sweetcorn and a chunky dolmio sauce that was hiding at the back with some cheese on top, wouldve had a roll or some bread but both have gone mouldy!

    I reckon chopped hot dogs and sweetcorn would make a nice chowder. Fry a bit of chopped onion til it goes clear, then bung in the chopped hot dogs and sweetcorn, a potato, chopped up small, and some parsley and cover with half-milk-half-water. Simmer it for about 15-20 mins til the potatoes break up. Grind in some black pepper or maybe add a dash of chilli sauce if you like things spicy. Should be kind of half way between soup and stew.

    I always used to make egg curry - just hard boil the eggs and pour the sauce over them after you've heated it up.

    My OH used to make egg curry. Then one day he fed the leftovers to our dog :eek: It was banned from the house after that. ;)

    spinach and potato curry is delish !

    with all those sauces and veggies to go in them you have a fair few meals to get you by ! add a portion of pasta / rice / pots and you are good to go lol

    could even freeze leftovers in single portion size for a later date HM "ready meal"

    It sounds like you could have some good meals there! Any of the meaty things - ie hot dogs & corned beef will go with pretty much any of the sauces. Experiment! After all, if you don't like it too much, you don't have to make it again!
    As someone said, corned beef & potato pie is nice. I make one with mashed potato layered alternately with baked beans, corned beef & cheese on top (if there's enough cheese, mix some with the mash.) Also can add llightly fried onions to the mix. Potato at the bottom of the dish, then one filling, then potato, another filling, finally potato, top with grated cheese, in the oven for about 1/2 an hour (basically till heated through & cheese nicely melted)
    Curry sauces are also nice on jacket potatoes. I expect other sauces might be, too.
  • Hi CAFCGirl :smiley: One of my & OH fave evening meals is very quick and easy veggie curry. We regularly use mushrooms (chopped quite thin, but not too thin, if you know what I mean !? :rolleyes: ) and just have a basic mushroom curry (Yummy) - but if I have courgettes in, I just love cutting them up quite chunky and adding them to the sauce first (as they take slightly longer to cook than the mushrooms, though, to be honest, I don't think you can overcook mushrooms, so feel free to throw them in all at the same time!) I'm also happy to use mini/tinned corn, brocolli and peppers in my veggie curry. I use them in any combination, or all at once, depending on what I have in. You don't even have to have rice with this sort of concoction either, as the veg curry fills you right up without, to be honest.

    The mushroom pasta-thing you mentioned ? Add a tin of tuna, sweetcorn (or/and peas) and hey presto, a loverly plateful of yummy, healthy food. :D

    Hmmmmmm...must run, I'm feeling the need for my breakfast with all this talk of food.

    Make pasta bakes :) Chuck pasta, tinned tomatoes, onions, sausages or cornedbeef, and anything you cna think of in a big dish and in the oven :) you can hide a multitude of sins like this ;)

    Have been really lucky with all the tips and recipe suggestions so thankyou so much one and all!

    Have now just got to get some potatoes and onions and I think I'll bve about fine :)

    Pasta last night was fantastic but edible, took leftovers for lunch, but wasnt hungry so left overs for tomorrows lunch now, because I forgot to bring it home again for my dinner grrrrr do we think it'll still be ok, its in the fridge at work.


    Have now saved all recipes to a word doc'! Am considering corned beef curry one night, egg curry (will need some eggs anyway!) and the layered pie so far this week, may even see if I can concoct layered pie with leftovers of corned beef curry, do we think this would work?

    Pizza, pasta bakes, barbeques, stews from the SC, soup from the SCand bread (home made). We are trying to cut back on meat and luckily my husband likes experimental cooking:D
