We have just tried a bit and it is ... Here goes this is what I used ... I downsized the recipe and used tinned mango as you had to puree it anyway ...

568ml Double Cream ... one big pint carton
100gs Golden Caster Sugar ... I used white caster
2 x 425g Tins Mango (drained) ... pureed in blender or FP

    Method ...

Put cream and sugar in a saucepan and heat gently until sugar dissolved

In a bowl or old ice cream tub ... I filled an old 1 litre tub ... mix cream mixture and mango puree ... stir well and leave to cool

Put cooled mixture in freezer for 2-3 hours

Take out and whisk or fork to break up ice crystals

Freeze again for another 2 hours and repeat whisking/forking ... this is quite hard and I bent my balloon whisk ... ... It will look a little grainy

    Finally freeze until solid

Remove from freezer a little before serving to make it easier to spoon out ... although I found it easier than commercial ice-cream to get out of the tub ...

Olive suggest serving it with mango slices, raspberry coulis and whole raspberries ... that is how we hope to have it on Saturday ... :p

Hope this ok to follow .... Sorry MBN for the wayward post .... If it helps there are no coupons in this months Thomas Tank Engine Mag .... :o
