Right , the liquid had clusters on fat which i have skimmed. It is dull grey, horrible and when i stir it, a whole lot of stuff comes up from the bottom - fat? And it goes cloudy so think i am going to bin it and just use stock for my soup.A little nonsense now and then is relished by the wisest men

Hi have been wide eyed at the amazing recipes using leftovers. so have now bitten the dust and purchased a pork hock which is cooking in my stock pot now. the question is (and am sorry if the question offends anyone) but what next? there is an awful lot of fat on this pork , should i have taken that off already?MY idea had been a soup but it is very greasy looking (the water that is)
The second q is prob. just as naive but you guys save everything. Is there anything other than as usual throwing away, that i should could or ought to do with the water cabbage has been boiled in(it contains bicarb of soda ) would appreciate any help as have determined to join in with this money saving.
Ihave stock piled lentils onions celery kidney beans carrots in readiness. So any suggestions will be very welcomed!!!;)0 -
Ok, allow me to be the first...
...why do you put bicarb in your cabbage water? My TV is broken!
Edit: refunded £515 for TV 1.5 years out of warranty - thank you Sale of Goods Act! :j0 -
lol cos my mum always did.....she said it softened the cabbage and tbh i prefer it that way..it tastes funny to me wthout!!0

Hi lcazma,
When your hock is cooked remove it from the pan. Allow the stock to cool and the fat will rise to the top so you can skim it off and you'll be left with a tasty stock that will make a great base for a soup. I usually use it to make lentil soup or pea and ham soup.
The water from your cabbage can also go into your soup or try this thread for more ideas:
boiled water from vegetables
There's an earlier thread on cooking hock that should help so I'll add your thread to it to keep the suggestions together.

Any old-fashioned recipe book will have recipes for ham and pea soup, or ham and veg soup.
You basically boil the hock, save the cooking water for stock, and remove the meat from the bone. We eat most of the meat one day, and make a split pea soup with the stock and last bits of meat the next day. Bought two hocks today already cooked . It was £5 for the two and I got 520 grammes. Now using crude figures (because my brain cant remember how to work it out and what you divide over what), that's £1 per 100g. COuld probably have got a bit more but i remove all the fat. Compared to tescos - finest ham, it's £2.17 per 100g or £1.74 per 100g under a current 2 packs for £4. So even on the offer price, it;'s 75% more expensive per 100g and it's much better quality ham! None of this pumped full of water rubbish. Happy!
now, i have two bones left. If i roast them would they make good stock? Everything is picked off.A little nonsense now and then is relished by the wisest men
