    Hello all,

Been lurking, but decided to post now!

Angela - how did you manage to eat nettles?!

Planning on making raspberry jam this year - it went down really well last year. However, last year we went to a PYO farm and they had gorgeous raspberries. This year it's reduced fruit from ASDA. :( Not had a chance to go this year, but fingers crossed I can make a little for close family for gifts! Also planning on making Sweet Red Onion Chutney, Sweet Chili Jam and Tomato Relish/Chutney with the excess tomatoes my parents will hopefully have grown! lol

Fancy the sweetcorn & chili relish - Alfie would you mind sharing the recipe? Weird it's come out salty - did you need to add salt to the recipe?

Regarding making jam from frozen fruit, that's what I did last year! Works perfectly.

Anyone have a recipe for lime vodka?? It's a long shot... lol

    Clare x

Hi Clare do you have any recipes for the tomato relish and sweet red onion chutney, I would really appreciate it if you could pm me them!

Well having seen everybody else making an effort I dragged the kids out this morning in our waterproofs and we have come back with 3 HUGE tubs of blackberries, I downloaded a recipe from the Tesco website for quick and easy jam and my first jar is proudly cooling in the fridge as we speak! I have put two tubs in the freezer, and will be making an apple and blackberry crumble for pudding tonight. The only drama is that I got stung by a wasp, put tea tree ointment on when I got home and although it still stings a bit could have been a lot worse!
So, now in need of ideas as to what else I can make with my berries, will be going again next week - there were lots just coming that weren't ripe yet so will definitely be worth another trip!

    Hi all

Blackberry recipe - there's a blackberry and coconut squares on the BBC Good Food website.

I can't paste the link as my comp has been playing up lately.

Foxy, so you're the 3rd casualty so far with blackberry picking, hope you feel better soon.

Clare, the reason why I ate the nettles was because I was stretching my hand quite far to get into a good spot, and the area was covered in nettles the same height as the blackberry branch. So I just grabbed a handful of large berries and nettle tops by accident  Tell you what, it's put me right off eating them in situ again.

If any of you have a local Nat West, they have free lifestyle mags called Sense. There was a recipe for a Rasberry and vanilla ice cream dessert in there which can be used for any fruit I reckon.

Line a square tin, cover it with thin slices of sponge cake. Cover with fruit, then cover that with vanilla icecream, then more fruit, then more sponge. Cover with cling film and put in freezer. Remove 30 mins before eating and sprinkle with icing sugar.

cdsmiler - the recipe came from my book of preserves - will post it tomorrow as am away from it tonight! Have had the idea that I will make another batch with NO SALT, then mix the two together to dilute the saltiness. Have also been told to boil a potato in the mixture as this will absorb the salt - no idea if this is the right thing to do with a relish? Will also add some more sugar. So will end up with double the amount (no problem as chilli plants are going mad and no frills sweetcorn is piling up in the cupboards anyway), sweetened. If this works I'll let you all know.

Thanks for the support - it is nice to start keeping a record of my Christmas makings. The hard bit is going to be a) not giving it away to family before Christmas or b) not keeping it all for ourselves.:)

Oooh and easy mistake to make but I am a lady rather than a gentlemen mum2one:rotfl:.

I've had a quick google and people seem to have success with frozen fruit (blackberries/raspberries) so I don't see why it shouldn't work for you :)
