Eggs Benedict - smoked salmon on a bread muffin with a fried egg on top and Hollandaise sauce over the top - add any extras, I like spinach, my OH likes cheese. Oh and fried egg on a pizza always goes down a treat!0

I vaguely remember a recipe I once had.......
Cut the top off of a loaf of crusty bread, scoop out most of the insides ( use this for breadcrumbs),
Fill with mixture of beaten eggs, small amount of milk, sweetcorn, tuna and seasoning. Replace top of loaf, cover with foil and bake in an oven for about 35-40 minutes (or until centre has set)
Was delicious and can be adapted to suit most taste (try using peppers, ham cheese etc)
We loved it and I might make one tomorrow now I've remembered it.
It also looks like you have made loads of effort when its really easy. It slices for serving and keeps in the fridge for a couple of days (so you can also use it for packed lunches) Delicious hot or cold!!!
This is probably a better suggestion than the FRIED EGG SANDWICHES I went on about earlier- but I do love a fried egg sandwich!!!:rotfl: :rotfl:

I've made this loads of times, its from the Delia Smith Complete Cookery Course.
8 eggs,hard boiled. 4 medium leeks, cleaned and chopped. 3oz strong Cheddar cheese, grated. 1 tbs Parmesan cheese, grated. 3oz butter. 1 1/2 oz plain flour. 3/4 pt milk. Pince cayenne pepper. Salt & Pepper.
Use 2oz of butter, 1 1/2 oz flour and the milk to make a sauce. Melt the other 1oz butter in a pan and gently cook the leeks for about 5 mins with a lid on the pan.
Put the leeks in the base of a buttered baking dish. Halve the eggs and arrange on top. Stir most of the cheddar, all the Parmesan and some salt & pepper into the sauce and pour over the eggs. Sprinkle the remaining cheddar and a pinch of Cayenne on top and pop into the oven until heated through and brown on top.
You can make this all in one go and as its hot it won't take long to brown in the oven. Otherwise you can make it ahead and store in the fridge so of course it'll take longer to heat thro.0
