Ideas for egg based evening meals please?

Delia Smith does lovely Alpine Eggs.
6 eggs
12oz grated cheese of your choice
1oz butter
Salt & pepper
Snipped chives (if you want)
Pre-heat oven to 180 C/ gas mark 4 / 350 F
Generously butter a shallow oven proof dish. Sprinkle on half the cheese. Carefully break the eggs into the cheese and then sprinkle over the other half of the cheese. Season with salt and freshly milled black pepper. Dot the top with a few flecks of butter and cook for 12-15 mins (until the cheese is bubbling and the eggs are set).
We have this with crusty bread and a big green and tomato salad.
Enjoy!

Actually, looking at the Alpine Eggs recipe you can probably hear my arteries clanging shut from here!!! Probably only for occasional use.:D

What about melting eggy bread sandwiches
Make a cheese and ham sandwich, using grated cheese, soak sandwich in beaten egg (both sides), fry gently until golden - my DH loves theseSquares knitted for my throw ~ 90 (yes!!! I just soak bread in eggy mix (egg & milk with salt and pepper) and fry until golden (or burnt).
for some reason we call this french toastIts luverly.
Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...0 -
Toast a slice of bread, put slice of ham and cheese on top of toast, followed by a fried egg. Next cover with a piece of bread. Make a white sauce, pour on top and finally grate some cheese on top. Lastly, pop under a grill until nicely browned.

What's that egg and spinach thing - eggs florentine maybe? It's basically just a heap of cooked spinach with a poached egg on top, and I think maybe grated cheese melted over.

Easy, delicious and my six year old will eat them instead of chocolate spread sandwiches.
Suitable for breakfast, dinner,tea, supper or anything else you care to mention!!!!:rotfl: :rotfl:
