Ideas for egg based evening meals please?

Options
We seem to have a steady supply (about 30 every two weeks) of lovely free range eggs for free, a lot get used in cakes, yorkie puds etc, we use some for eggs & soldiers or mashed egg sarnies for lunch, but still end up giving lots away.

I'd like to be able to use more of them in our evening meals, but other than omelette/frittata, i'm a bit :confused:

Any suggestions?

    Egg fried rice.

    There are some curries with eggs in, inside a meatball. I dont know if madhur jaffrey has a website but theres a recipe for that in her books.
    Or you could do pickled eggs for everyone for xmas!

  • Souffle? Boiled egg salad? Home made scotch eggs? Pickled eggs (not my favourite!) Jamie Oliver's famous "all in one pan" English fry up for dinner...
  • Fry a chopped onion and half a pepper, add a pinch of mild chilli powder.
    Stir in a small tin of tomatoes and cook for a few mins.
    Make 2 hollows in sauce and break an egg into each.
    Cover the pan and poach until eggs are firm.
    Serve on a toasted muffin with the tomato sauce poured over the top, sprinkle with grated cheese and a few crushed tortilla chips.
    ...it is not of more importance than daily life, which I have an enduring wish to make as useful and beautiful as possible.

    Just for information.. your not meant to eat more then 4 eggs aweek due to there protein content! I'm sure you won't explode though!!!
