Totally inspired as I am by all of you I won't buy anything before the weekend when we go shopping, so I rummaged through the store cupboard. Since we do a lot of Indian cooking, I have all the spices at home, but I calculated that this meal cost me a wapping £0.90 for two, plus husband has leftovers for work tomorrow and there is still loads of rice left, which will be made into egg fried rice tomorrow.
Here goes the recipe (from BBC Food)
Ingredients
1 tin of chickpeas (drained and rinsed)
1 tbsp oil or knob of butter
1 onion (chopped)
1 clove garlic (crushed)
2 inch piece root ginger (grated)
¼ tsp red chilli powder
½ tsp cumin powder
¼ tsp coriander powder
¼ tsp turmeric
¼ tsp salt
1 fresh tomato (chopped or 1 small tin of tomatoes) I actually used a normal tin of tomatoes
a pinch of garam masala
Method
1. Heat a deep saucepan or a medium sized wok and add the oil or butter followed by the onions and garlic....

A variation on this theme is chickpea & spinach curry. Exactly the same process as the recipe above. Just add a bag of spinach about 5 minutes before you serve. You could use frozen spinach too.0

I've made a meal planner (yours was great by the way) and I had put veg curry on it. I've just got to find all the recipes and tot up how much everything costs now. recipe was brilliant, took in total 20 minutes from taking the onion out of the basket to filling our plates. Was really delicious as well!

Last night I made the chickpea curry (featured on another thread) - though forgot the corriander I'd bought especially for it. Still tasted lovely - I added mushrooms too. For quants:
1 small/medium onion
1 clove garlic
1 tin of chickpeas, drained
1 tblsp curry powder
1 400ml can of coconut milk (or use coconut cream sachets and dilute with water)
two handfulls of mushrooms
100ml of tomato paste
Handful of corriander (I didn't add this but it would have made it taste extra nice!)
Fry onions and garlic until soft. Add curry powder (I used rogan josh as all that was spare!) then fry for one minute. Add a big squidge of tomato paste - I recon I used about 100ml of the double concentrated tesco stuff, the coconut milk & drained chickpeas, roughly chopped mushrooms and simmer for 15-20 minutes. Near the end of the boil add the corriander. Makes enough for three good size portions (or two adults and two children?)
Serve with hot naan and I used brown rice.
For afters I used tesco value chocolate melted in a glass bowl over boiled water in a frying pan, then added cornflakes. Mixed up, stuck into cake cases and stuck in the fridge for 20 minutes. Mmm, chocolately snack.

Sounds lovely, I'm not a great fan of mushrooms in curries, I would probably replace them with something else. I love chickpeas though, might try this one later in the week. Thanks

Or if you're a bloke, this one is quite good, but IMO better as a side dish than a main.If you lend someone a tenner and never see them again, it was probably worth it.0

The one I've posted is quite good as a main because the mushrooms add the bulk and protein. I would recommend having using curry queens tarkha dahl as it is buttery and not very spicy. This was still quite hot though. Perhaps add some cubed potatoes as well?

Does anyone have a nice recipe for a chickpea curry, im not used to using chickpeas but im sure I read on here a recipe that sounded lovely-of course now I can find it lol
