What to do with a fresh coconut?

I was given a coconut a few weeks ago and would love to make a pudding or a cake with it.
I ve been googling for ages but all the recipes I can find use dessicated coconut rather than fresh.
Can anyone share a recipe to use a fresh coconut or point me in the direction of where to find one?

Crack it open now before you find a recipe to check it's still okay. i kept one from Mr S once for 2-3 weeks and when I cracked it it had gone totally off! If you can't hear liquid when you shake it, it's probably gone
if you love the taste of coconut (like me!) you could stick the flesh in a blender and make coconut butter to spread on toast, sandwich a sponge with, stir fry veggies in, dip fish cakes in etc
blend it to a chunky paste and mix it with ice-cream and cocoa powder then freeze in balls to make delicious frozen puddings, or drop a tsp of chunky coconut and tsp jam into cases filled with muffins mix for jam & coconut muffins.
i'm afraid i don't really have any exact recipes but it's simple enough to add/replace to existing dessert recipes. it goes especially good with chocolate is my no.1 tipLiving cheap in central London :rotfl:0 -

My son won a coconut at the schools summer fayre (coconut shy), and i cant see it go to waste- so any ideas what i can do with it?0

Break out the toolbox! (Or buy some new pound shop tools so they are clean for this job...) Drill through 2 of the 'eyes' at the top, then pour out the juice - drink some but keep some for later too. Saw the coconut in half with a small saw (mind your fingers!) and use a blunt knife or large screwdriver to prise out the white flesh to eat. If you want to keep the left over flesh for later, put it in some of the juice in the fridge to stop it drying out. I like to snack on it over a few days.
Used to be a big occasional treat for us as kids! Learned the hard way that a corkscrew will work in a pinch to open the eyes, but a bread knife won't cut the shell. A hammer / big stone will get it open but tends to shatter the shell. Half dried out flesh isn't nearly as tasty. Fresher ones are nicer and have more juice. If you don't have enough juice to submerge leftover flesh, use milk.Trust me - I'm NOT a doctor!0 -

I drop a coconut onto the stone flags in the garden to crack it. funny thing is it nearly always cracks in the middle! a hammer just bounces off them and can give you concussion if you arent careful!
I use a blunt knife to gouge out pieces of coconut, but if I dont want to eat it straight away I used the 'saved' milk to store it in.
you can also grate the coconut and it is brilliant on jam on sponges. tastes much better than dessicated.0 -
