What to do with a fresh coconut?

Hi everyone, I'm having a bake-off (against myself), and I'm stuck - hope you can help!! My son won 2 coconuts at the fair last week, and I can't think what to do with them. I was thinking of something sweet, like Bounty type bars, but the recipes call for dessicated coconut, and drying it isn't really energy efficient. What Would You Do? Coconut = curry. Grate it thickly and use in a mild curry with a lot of fruit.0

But to save you the grief I went through, open the coconut first to make sure it's not off, bearing in mind that it's the bit next to the shell that goes first.
This will save you buying all the mascarpone etc, and then finding out you have to get another coconut.
Plus, don't even think about it unless you have a food processor. Grating a coconut by hand is almost impossible, which is why there's no "mrbadexample makes coconut cake" thread on here, and why I've got out of date mascarpone & stuff in the fridge. :mad:If you lend someone a tenner and never see them again, it was probably worth it.0 -

I make this one with dessicated coconut - I just (if I remember) soak it in a bit of milk first to soften it up. I use coconut flakes rather than dessicated coconut to decorate it (although it seems to be very popular at work without the decoration too...0 -

cant you make a bounty bar with moist coconut, it would be nice i think with some binding agent?0

if you can't use all of the grated coconut at once, you can freeze it, it comes in very handy for curries etc that ask for just a few of Tablespoons of fresh coconut0

:TCheers everyone - one of the girls at work finishes on Friday to get married, so this will be just the thing - doesn't it look appropriate for such an occasion? Will grate the rest and stick it in the freezer and maybe try drying some in the oven next time I make meringues.
