Its a new recipe from Yum magazine-although true to form I will be adapting it-it calls for a jar of hot chilli relish but I wont use that, just add a chilli instead.
Am not sure if can post exact original recipe up due to copyright-but the one I will be using will involve 4 chicken thighs and drumsticks, one pack of chorizo, a red onion and 2 peppers, some paprika, 400g rice, tin tomatoes and 1l stock (which is pretty much the same recipe I used before a long time ago when I last made one.
Brown chicken and then chorizo pieces, fry onion and peppers, stir in rice and paprika, then re-add the chicken and chorizo, the stock and the tomatoes and simmer for 35-45 minutes until rice and chicken is cooked.
Reading that back-its my basic paella recipe, but with long grain rice instead of bomba, and no saffron involved.

The magazine is very good though-I would recommend it

Mm. After having spent good money on some extremely detailed metabolic type testing (which means I need to change what my boyfriend and I eat quite considerably) I've just started forcing organisation on the whole meals process with weekly Ocado shopping deliveries and an organic veg box delivery. Mind if I try to hang on to my own sanity by joining in here too?

    Monday
Lunch: Cold chicken legs from previous night's roast; spinach salad
Dinner: Chilli lamb burgers with mini naan bread, tomato and houmous

    Tuesday
Lunch: Leftover lamb burgers reheated (this didn't work; they smelled weird, shrank and were really dry! Won't be doing this again) with spinach salad
Dinner: Sticky pork fillet with steamed asparagus and Jersey Royals

    Wednesday
Lunch: out with work (pizza, bleurgh)
Dinner: Salmon burgers with toasted wholegrain rolls and salad veg

    Thursday
Lunch: Smoked salmon and prawns with spinach salad
Dinner: Black bean chilli with wild rice

    Friday
Lunch: Leftover black bean chilli in soft tortilla wraps with a little soured cream
Dinner: Italian sausage meatballs with minted broad bean and pea salad

    Saturday
Breakfast: poached eggs and asparagus on wholegrain muffin with Hollandaise sauce
    Lunch: Spanish cured meat salad
Dinner: Green Thai prawn curry with wholegrain rice

    Sunday
Breakfast: Peppered smoked mackerel with scrambled eggs on toast
Lunch: Grilled bacon with cooked spinach and sauteed mushrooms
Dinner: Lamb tagine (making extra for lunch leftovers on Monday)

The veg box comes on Thursdays so I always have to work out what we're having by then. Luckily they tell you in advance what you're getting, so you can plan other shopping/menus around it.

I'm very late this week too, but here's how it is:

Monday: Lunch unknown as travelling (turned out to be carp overpriced cheese toasties in a train station but that was the best of the situation). Dinner - spag bol.
Tuesday: Lunch - sandwich, then I was very naughty and got a Greggs pasty and muffin too. I was punished when I bit into the pasty and found the woman had given me the wrong one. Dinner was salmon fillet with mash and peas.
Wednesday: Lunch - sandwich. Dinner - prawn curry and rice.
Thursday: Lunch - leftover curry and rice. Dinner - bacon and tomato pasta.
Friday: Lunch - leftover pasta. Dinner - YS breaded haddock fillet, mash and peas.
Saturday: Lunch - probably a load of toast. Dinner - not sure, thinking of getting a cheapish frozen pizza then just my side portion of onion rings, garlic mushrooms or such from the takeaway to make it cheaper than buying it all there.
Sunday: Lunch - chicken in creamy mushroom sauce, mash, carrots and peas. Dinner - tuna salad.
