Shortlisting before job officially closed

I have noticed an increasing number of employers adding the rider "this vacancy may close early if we receive the required number of applications" to their job adverts.
I think it is due to the huge number of applications they are receivng at the moment, there is so much competition for jobs.
A job I interviewed for recently had received 160 applicants in the 24 hours it was open. Bit disheartening really. I have a sneaky feeling that may have already been spoken for due to a couple of things the interviewers let slip.0
