I don't think there's any issues with finding old engines, there seem to be plenty around for VWs, not sure about the 1800 though as it is rarer.

I wouldn't put in modern engine. Getting rid of the lovely sounding flat air cooled engine. You could go for a full mega squirt kit for increase reliability fuel and power while still having that nice air cooled engine.
