Leaving contract, going PAYG... question about offer

I just called Orange because my 18 months contract is ending and I want to transfer to PAYG to save some money on bill and go to o2 in autumn. They said I should receive a SIM card in 25-30 days. But I just realized you can get a pretty good phone/PAYM offer when you say you want to leave them. So the questions are:
1) I cancelled my PAYM, moved to PAYG. When i'll want to leave PAYG as a previous PAYM customer will they still make an offer to stay?
2) If answer to #1 question is no, while I wait for my PAYG sim card, can I call them and say I changed my mind, i dont need PAYG i wanna leave, send me PUK, will they still make an offer?
3) What's current o2 3G data 'fair-policy' limit? As far as I understand Orange's 500-750mb. o2?
