Salmon, baby pots and broccli today (extra from last nights dinner)
. Just need to wait until the canteen opens so i can use thier microwave to warm it up a bit. Thinking about spending 20p in the vending machine for a hot chocolate, funny thing is I'm convincing myself to save it up for another couple of days and get a chocolate bar instead. LOL Crazy isn't it !

Can I join, gotten abit desperate down here and I need to seriously cut back.
I'm going to try and go for 20 homemade lunches this month. I had to buy yesterday as my organisation is rubbish but today I have brought my own.
So thats 1 out of 20 so far.

Just wondering if anyone has any ideas for really cheap but tasty lunches? I've been having sandwiches pretty much everyday which is getting a bit boring and stodgy. If there was something I could make at the weekend and freeze that would be okay but I don't have a lot of time during the week. I make extra if I'm doing pasta/rice in the evening and add a few saldy bits and have it for lunch the next day. Or rather than bread I'll have wraps or bagels when on special (Morrison's have New York bagels on BOGOF at the moment...)
Or do a big batch of soup and keep it in the fridge
Sometimes take oatcakes and pate (buy biggish block of pate, chop into portions and freeze. Take out portion when get up in the am and by lunch its defrosted but still cool IYKWIM) and if I've got time/budget will add cucumber etc and assemble at lunchtime so oatcakes don't go soggy.
As above with cheese/cream cheese and crackers and fruit...

Some ideas for you hopefully:- If you have access to a microwave you can bring in a potato and blitz it in the microwave for 6-7 mins and have it with cheese (my fave!) and ham, or some chicken mayo (I usually grill some chicken at the weekend and then make it into a filling with some mayo, a bit of wholegrain mustard and/or sweetcorn.
- Make a big pot of pasta, mix with some mayo, tuna and sweetcorn - keeps for a few days.
- Do a massive batch of soup (if you like, I can give you some recipes for some dead simple soups) - I usually then whack in a boiled potato to bulk it out. I usually do enough soup for 4-8 servings - I keep about 4 in the fridge (they keep for 4-5 days) and then the rest in the freezer.
- And like everyone else says, the best lunches are usually leftovers from the night(s) before. My faves that are particularly yum the next day are bolognese-y type dishes and risottos.
