You've got me thinkikng, I need a theme for my cake, my friend decorates it for me and in the past I've had a drunk homer simpson and a nightmare before xmas cake (complete with black icing...very cool) so far the only thing I can thing of is the Grinch!!! Anyone got any odd ideas I can put on my cake?0

I do a lighter coloured Christmas cake, because I don't much like dark fruit cake and if I make it, I'm jolly well going to eat it! It has dried apples and pears in instead of some of the raisins and sultanas, and is very moist and very yummy!

I made the Delia cake last year but struggled to find a time when I had enough hours to bake it. This year I will use one of the recipes that suggests a shorter time in the oven.Nevermind the dog, beware of the kids!0

Had to go for a rummage through my recipe folders.
LIGHT FRUITCAKE
350g/12oz no-soak dried apricots
175g/6oz dried pitted dates
175g/6oz dried apples or pears
175g/6oz dried peaches
60g/2.5oz chopped glace ginger
350g/12oz dried mixed fruit
150ml/ 1/4pt brandy
250g/9oz unsalted butter or margarine, softened
250g/9oz golden caster sugar
5 medium eggs
175g/6oz plain flour
2 tsp baking powder
150g/5oz ground almonds
125g/4oz blanched almonds, roughly chopped
2 tsp vanilla essence
Blend apricots, dates, apples/pears and peaches in a food processor and leave in a bowl with the ginger, mixed fruit and brandy for at least an hour (preferably overnight). Preheat oven to mark 2/150C/300F. Grease and line a 9 inch cake tine. Beat butter/margarine and sugar together until creamy and then gradually beat in the eggs, adding a little of the flour to prevent curdling.
Sift the remaining flour and baking powder together and stir. Add the almonds (both types), vanilla essence and soaked fruits and mix till combined. Put mixture into the tin and level the surface. Bake for about 2hours 15min or until a skewer comes out clean. Cool in tin, then wrap and store.
This is quite tolerant of changing quantities to suit packet size or whatever you happen to have in your cupboard. Also, I swap out the almonds for cashews, as almonds make me wheeze!0 -

I am going to be making my Christmas Cake in the next week or so, then I have plenty of time to ply it with alcohol before icing it just before Crimbo! I am so excited! :snow_laug
