Hello everyone,
Just wondering if this was normal.. I have made some cupcakes from the recipe in the hummingbird bakery book, they are really light they almost 'half' when taking them off the paper?? Is that normal?!?
If not, does anyone have a lush cupcake recipe?? For vanilla and chocolate.. Thank you xI am a very proud Mummy and Wifey

a proper cupcake will be very fine in texture, and break apart easily. it is nothing like the victoria sponge type you are probably used to. so yes, if it sticks to the papercase then it will break apart when you try and remove it

4oz butter
4oz sugar
3oz self raising flour
1oz corn flour
2 eggs
few drops vanilla essence
splash of milk
the corn flour makes them lighter
i also make a dip in the middle of mine with a teaspoon that seems to keep them more level
Just bought a pack of cornflour today to use in cupcakes for the first time...on the back of pack it states for making lighter cakes .... use 4 parts plain flour to 1 part cornflour. I always use self raising flour for cakes...what does everyone else use ?0 -

Did you get the nozzles off Ebay AnnieH...and what sort of bags do you use ? I love the colours, what did you use to colour the buttercream for your roses ones ? Sorry so many questions ! Only I've got a couple of dates coming up where I have to make cupcakes for.... my daughters product launch night at her shop, I managed to get her shop logo on to rice paper circles..so they should go down well and also my grandsons 4th birthday party shared with his 4yr old cousin and they are have a birthday cake each... one Mickey Mouse and one Minnie....so I may get the rice toppers to match them in Mickey & Minnie Mouse design but I also want to try my hand at piping buttercream on the top even its the ice cream cornet cupcakes !0

I got the nozzles from my local sugar craft shop. The colours are sugarflair gel colour Christmas red, and Squires Kitchen paste colour Fern.
I use disposable bags from Morrisons, as they have an easy grip surface, but I also wash them out and reuse them after.0 -

We have a Morrisons nearby....have n't noticed any disposable bags, have a look next time I'm in. Our local sugar craft shop...had no wilton nozzles in, so I'll have to rely on Ebay. I am after a bright pink colour (buttercream) as theme in my daughter's shop is cerise pink & black...somehow I don't think black buttercream will look too appetizing ! Your cakes look fab...I could just eat one !0

The recipe I use for the cupcakes is from the Hummingbird Bakery. Its in a book, but I'm sure a quick google would find it easy enough.
The buttercream recipe is from Wilton.com, coloured with paste food colouring, and iced with a 2D nozzle going form the middle outwards in a swirl.0 -

I am doing a cupcake course next week so hopefully will be able to practise some different tecniques
Also... ANOTHER QUESTIONHow do you stack you cakes without them sinking in to one another? Is it dowels?? Do you use wooden or plastic??
And, does anyone know the cheapest place for cakeboards??
